The Italians call pinzimonio their finest appetizer: crisp, raw-cut vegetables served with a small bowl of really good olive oil for dipping. The Calvi family from Imperia made their pinzimolio for exactly this occasion. Taggiasca and Ogliarola olives are harvested before they are fully ripe. That is why the oil smells fresh of grass and has that subtle peppery finish that makes raw vegetables taste so vibrant.
