Edmond Fallot Burgundy Verjus
Verjus is the juice of unripe green grapes and was used in French cuisine long before lemons. Edmond Fallot from Beaune presses it from Burgundy grapes harvested before they ripen. The result is a mild, fruity acidity: gentler than vinegar, rounder than lemon. A dash in the pan after frying, in the vinaigrette, or in the sauce, and your dish gets a fresh lift without the acidity overpowering everything.
