Ortiz El Velero Sardines in Olive Oil a la Antigua
In Spain, Ortiz sardines are an institution, and for good reason. The sardines come fresh from the fish auctions on the northern coast, are cleaned by hand, briefly fried in olive oil, and then placed in the can with olive oil and a pinch of salt. "A la antigua" means: the old-fashioned way, with the silvery skin. Open the can, place the sardines on a piece of toasted bread and drizzle a little of the oil over it. You don't need much more.
